Fatt
'Fatt' is a kitchen performance based on the Fattush, a Levantine salad made from an assortment of greens and vegetables, mixed with pieces of pita bread. It draws its inspiration from the breaking of bread and takes root in the contrast between entity and fragment, a duality reflected in the Greek word 'pita', which means solid or resistant, and the Arabic-derived word 'Fatt', which that means 'concasse' (crushed). The shared, communal Fattush is served as a mezze in a clay receptacle and is one third bread and two-thirds greens, a ratio that drives the whole performance.
